smokey hamburgers

We had these tonight and I made them on my little George Forman with warmed pretzel buns from Publix.  They were delicious and I did not even add any salt to the meat.  This recipe made nice moist burgers with great flavor!

1 lb ground beef
1 tsp garlic powder
1 T worcestershire sauce
1 T liquid smoke flavoring
seasoned salt to taste
1 T olive oil

  1. Preheat a grill for high heat.
  2. In a medium bowl, lightly mix together the ground beef, Worcestershire sauce, liquid smoke and garlic powder. Form into 3 patties, handling the meat minimally. Brush both sides of each patty with some oil, and season with seasoned salt.
  3. Place the patties on the grill grate, and cook for about 5 minutes per side, until well done.

TIPS:
1. Add 1/2 teaspoon of seasoning: McCormicks Hamburger seasoning or Montreal Steak.
2.  Add 1 egg white (optional, but it makes the meat stick together much better).
3.  Olive oil is totally unnecessary.

Bobby Flay's Buffalo Burger

1 1/2 lbs ground chuck (80% lean) or ground turkey (90% lean)
kosher salt and freshly ground black pepper
1 1/2 tablespoons canola oil
1/2 cup hot sauce
Blue cheese sauce (recipe follows) or 1/2 cup blue cheese, crumbled
4 hamburger buns; split; toasted if desired

*If making sliders, use dinner rolls (Hawaiian King) instead of hamburger buns

Divide the meat into 4 equal portions (or 8 equal portions if making sliders). Form each portion loosely into a 3/4 in thick patty and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper. Cook the burgers, using the oil.Brush the burgers with some of the hot sauce, flip over onto a plate, and brush the other sides of the burgers with more of the hot sauce. Place the burgers on the bun bottoms and slather with some of the blue cheese sauce or crumbled blue cheese. Cover with the bun tops and serve immediately.

southwest burgers

Full size or sliders these are great! I made them without the green onions since I did not have any in the house and I also just used regular shredded chesddar cheese.  Overall the burgers had great flavor.  However, I cooked them on the BBQ and because of the cheese inside the burgers they just went up in flames!  Next time I think I'll cook them on the indoor grill or make sure the BBQ is on very very low and slowly cook the burgers.

1 lb ground beef (80/20)
1 tablespoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
2 stalks green onion, sliced (green part only)
1/2 cup shredded Mexican blend cheese
small rolls of your choice, sliced crosswise (use King's Hawaiian Bread rolls)

In a large bowl, combine all spices together.
Add the ground beef, green onion and cheese into the bowl and gingerly mix in, making sure you don't overwork the beef.
Form large meatballs of the beef mixture to create slider beef patties.Place the patties on a hot grill, grill pan or griddle. If using a grill pan, place a grill press over the patties. Allow the patties to cook thoroughly on one side before flipping. When patties are fully cooked (roughly 10 -12 minutes), place the patties inside each sliced roll.Serve with your preferred toppings and condiments.
