  • 1cup salsa
  • 1 -2cup cooked chicken (I use about 1-2 frozen chicken breasts)

  • cooking spray
  • OPTIONAL INGREDIENTS
  • 1⁄4-1⁄2cup black beans
  • 1⁄4-1⁄2cup corn
  • 1⁄4-1⁄2cup chopped bell pepper (Red, Yellow, Orange, and or or Green)

  1. Cook Chicken (bake, skillet, or grill) and cut into small pieces. Set aside.
  2. Preheat oven to approximately 350 deg.
  3. Combine 1/2 cup Sour Cream and 1/2 cup Salsa in a bowl. Set aside.
  4. Combine 1/2 cup Sour Cream, 1/2 cup Salsa, Chicken, and 1 cup Shredded Cheese in a bowl. Set aside.
  5. Spray a 9" x 13" pan with non-stick Cooking Spray.
  6. Evenly fill each tortilla with the Sour Cream, Salsa, Chicken, and Cheese mixture. Roll up, and place in pan.

  8. Sprinkle 1/2 cup Shredded Cheese on top.
  9. Bake for approximately 20 minutes, or until cheese melts.

  11. Optional Modifications: One of the best things about this recipe is that you can change it up as much as you want and it always turns out great! Try adding black beans, corn, green onion, fresh peppers, etc. to the mixture that goes inside the tortillas. Use less chicken and/or salsa when adding other ingredients. Follow all other steps as indicated.

Enchiladas Suizas

Makes 8 enchiladas
  • 1medium white or yellow onion
  • 4large or 6 small tomatillos
  • 2poblano chiles (or 1 can of whole green chiles)
  • 3 to 4cloves of garlic, unpeeled
  • 1 1/2cups chicken stock
  • 1handful cilantro leaves and stems, plus more leaves for garnish
  • 1/2teaspoon dried oregano, preferably Mexican
  • 1pinch ground allspice or clove
  • 1teaspoon cumin, ground
  • Zest and juice of one lime
  • 1teaspoon salt, plus more to taste
  • 1jalapeño chile, seeds removed (optional)
  • 2cups boneless cooked chicken, shredded, sliced or diced
  • 8corn tortillas
  • 2cups shredded jack or mild cheddar cheese
  • 1/2cup sour cream, crème fraîche, or Mexican crema
  1. Heat the broiler. Peel and quarter onion. Remove papery husks and wash tomatillos. Cut poblanos in half lengthwise and remove stems and seeds. On a foil-lined sheet pan, place onion, tomatillos, unpeeled garlic cloves and poblanos skin side up. Broil vegetables until mildly charred, turning the onion pieces and tomatillos over after a few minutes to expose other sides to the heat source. Take care that the garlic doesn't get too burnt.
  2. Scrape blackened skin from the poblanos, peel the garlic and put vegetables into a blender; include any juices from the baking sheet. (Drain and add canned green chiles, if using.) Add chicken stock, cilantro, spices, lime juice and zest, and salt and blend until completely puréed. Taste, and if you want it to be spicier, add the jalapeño and purée again until completely smooth.
  3. Pour contents of blender into a heavy-bottomed sauce pan and simmer for 20 to 30 minutes until slightly reduced. Taste and add more salt, if needed. If salsa is too thick, add a little bit of water to it. Lower oven temperature to 350° F.
  4. Make the enchiladas one at a time: Dip a tortilla in the salsa until just softened. Lay out on a plate, put some chicken across the middle of the tortilla and roll it up. Place in a baking dish or directly on an oven-safe dinner plate. When all of the tortillas have been made, ladle the salsa generously over them, sprinkle the cheese over the top, and place the baking dish or plates into the oven. Bake for 15 minutes, until chicken filling is heated through and cheese has melted. Serve with generous dollop of sour cream on top, and some chopped fresh cilantro.

  • 1 tsp Oil (approx. 1 spritz cooking spray)
  • 1 teaspoon ground Chipotle Chile Pepper

  • 1/2 teaspoon kosher Salt
  • 1 (1-pound) Flank Steak, trimmed
  • 3 tablespoons Canola Mayonnaise

  • 1 teaspoon Water

  • 1 cup chopped Onion
  • 2 large Garlic Cloves, minced
  • 1⁄2 cup canned Tomato Sauce
  • 1/3 cup Reduced Sodium Chicken Broth
  • 9 ounces cooked, shredded Chicken Breast
  • 1⁄4 cup plus 1 tablespoon chopped fresh Cilantro
  • 1 teaspoon Chili Powder
  • 1 teaspoon ground Cumin
  • 1⁄2 teaspoon dried Oregano
  • 3⁄4 teaspoon Kosher Salt
  • Cooking Spray or Oil Mister
  • 8 (7-or 8-inch) Low-carb, Whole Wheat Flour Tortillas
  • 1 1⁄2 cups Enchilada Sauce
  • 1 cup shredded Reduced-fat Mexican Cheese Blend
  • 2 tablespoons chopped Scallions, for garnish
  • 4 tablespoons Light Sour Cream, for serving (optional)
Directions
For the Sauce:
Heat a medium nonstick saucepan over medium heat. Add the oil and garlic and cook, stirring, until golden, about 1 to 1 1/2 minutes.
Add the chicken broth, tomato sauce, chipotle chile, chili powder, cumin, salt, and black pepper. Bring to a boil, reduce the heat to low, and simmer until the flavors blend, 7 to 10 minutes.
Serve immediately, or let cool and refrigerate in an airtight container for up to 3 days, or keep frozen for up to 3 months.
For the Enchiladas:
Preheat the oven to 400°F.
In a medium nonstick skillet, heat the oil over low heat. Add the onion and garlic and cook, stirring, until soft, about 2 minutes. Add the tomato sauce, chicken broth, cooked chicken, 1⁄4 cup of the cilantro, the chili powder, cumin, oregano, and salt. Simmer until the flavors blend and the sauce reduces, 4 to 5 minutes. Remove the pan from the heat.
Spray a 13 x 9-inch glass baking dish with oil. Put 1/3 cup chicken mixture into each tortilla, roll them up, and place seam side down in the baking dish. Top with the enchilada sauce, then sprinkle the top with the cheese. Cover the dish with foil, being careful it does not touch the cheese. Bake until hot and the cheese is melted, 20 to 25 minutes.
To serve, put an enchilada on each of 8 serving plates, sprinkle with the scallions and the remaining 1 tablespoon cilantro, and serve with light sour cream on the side, if desired.

shortcut chicken and green chilies empanadas

Shortcut Chicken and Green Chilies Empanadas

2 reg. sized chicken breasts, seasoned with salt & pepper, cooked and shredded (see notes)
1 small (4 oz) can fire roasted diced green chilies
3 ounces cream cheese, softened
1/3 cup shredded cheese (any flavor, pick your favorite)
1 package refrigerated pie crusts (2 sheets in a box)
egg wash (1 egg + splash of water)

directions:
1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. In a large bowl, combine the chicken, chilies, cream cheese and shredded cheese. Unroll the pie crusts onto a lightly floured, flat surface. Cut out into rounds, using a 3-inch cookie cutter. (I had to use a 2-inch cutter, which worked great, they were just extra small.) Re-roll dough as needed. Repeat procedure with remaining pie crusts.

2. Arrange the rounds on a clean, flat surface. Place a small spoonful of chicken mixture in the center of the round. Fold dough over filling, pressing edges with a fork to seal. Repeat until finished.

3. Arrange empanadas on a prepared baking sheet. Brush with an egg wash. Bake 12-15 minutes until lightly browned. Ovens vary so keep watch them closely.
