      1/2 teaspoon cinnamon
      1 tablespoon cumin
2 tablespoons chili powder, or Penzey’s 9000 chili mix (I prefer the mix…it’s more rounded flavor!)
      1 teaspoon dried oregano
      1 teaspoon unsweetened cocoa powder
1 chipotle pepper in adobo sauce, minced
One 28 ounce can crushed tomatoes
On 15 ounce can chicken broth
One 15 ounce cans black beans, drained and rinsed
One 15 ouce can red beans, drained and rinsed
In a small saucepan bring 2/3 cup water to boil; add quinoa, reduce heat to low and simmer for 15-20 minutes, or until quinoa is tender and all water is absorbed. (The little ‘tail’ should be showing on each grain.) Set aside.
In a large stockpot heat the olive oil over medium heat. Saute onion and garlic with Splenda until soft. Stir in zucchini and pepper and cook for 5 minutes. Add ground turkey and break up into chunks. Cook until no longer pink, but not cooked completely through.

      turkey sausage casserole

1/2 cup (1 stick) butter or margarine, divided
         3/4 pound sliced mushrooms
         4 tablespoons all-purpose flour
1 1/2 cups chicken or turkey broth
         1/2 cup whipping cream
1 cup shredded Swiss cheese (or cheddar)
         1 teaspoon Dijon mustard
         1 teaspoon salt
         Freshly ground black pepper
3 to 4 cups cooked turkey, cut into bite-size pieces
1 pound bulk sausage, cooked and drained
2 cups herb-seasoned stuffing or any leftover stuffing

In a large saucepan, melt 4 tablespoons of the butter and saute the mushrooms, stirring occasionally, until most of the liquid has evaporated. Sprinkle in the flour and cook over low heat, stirring constantly, for 1 minute. Stir in the chicken or turkey broth and the cream. Cook over medium heat, stirring, until the mixture comes to a boil. Cook for 1 minute.
Remove from heat and stir in the cheese, mustard, salt, pepper, turkey and sausage. Pour into a greased 2-quart casserole. Melt remaining 4 tablespoons butter. If using dry herb-seasoned stuffing, place it in a small bowl and toss with the butter. Sprinkle over the casserole.
If using leftover stuffing, sprinkle it over the casserole and sprinkle the butter over the top. Casserole may be covered with foil and refrigerated for 2 days, or frozen for 1 month and defrosted the night before serving. Bake, uncovered, at 350 degrees for 30 minutes, or until top is browned and sauce is bubbling.

      cheesy brocccoli and rice casserole

You can easily toss in left over chicken or turkey into this casserole for a complete meal!

Serves 8-10 as a side dish
2 slices hearty white or wheat sandwich bread, torn into pieces
      3/4 cup grated parmesan cheese
4 tablespoons butter, melted; plus two tablespoons chilled
      1 garlic clove, minced
2 pounds broccoli (about 3-4 medium heads of broccoli), florets cut into 1-inch pieces, stems chopped
      1 onion, finely chopped
1 1/4 cups long grain white rice
      4 cups low-sodium chicken broth
      1 1/4 cups half-and-half
      1 teaspoon salt
2 cups shredded extra-sharp cheddar cheese
      1/8 teaspoon cayenne pepper
Adjust oven rack to middle position and heat the oven to 400 degrees. Grease a 9X13-inch baking dish. Pulse bread, 1/4 cup parmesan cheese and melted butter in a food processor until coarsely ground. Add garlic. Set aside.
Microwave broccoli florets (save stems for later), covered, in a large bowl until bright green and tender, 2 to 3 minutes (no need to add water). Be careful not to overcook or they will become soggy and discolored. Melt remaining butter in a large pot over medium heat. Cook onion and broccoli stems until softened, 8 to 10 minutes. Add rice and cook, stirring constantly, until rice is translucent, about 1 minute. Stir in broth, half-and-half, and salt and bring to a boil. Reduce heat to medium-low and cook, stirring often, until rice is tender, 20 to 25 minutes. Off the heat, stir in cheddar cheese, cayenne, remaining parmesan and broccoli florets.
Pour the mixture into prepared baking dish and top with bread crumb mixture. Bake until the sauce is bubbling around the edges and the top is golden brown, about 15 minutes. Cool 5 minutes. Serve.

      BBQ turkey quesadillas

We made these with leftover turkey from Thanksgiving 2011.

      8 large burrito-size flour tortillas
2 cups shredded leftover cooked turkey
      1/2 cup barbecue sauce
      2 green onions, thinly sliced
1 (3.5 ounce) can green chiles, drained
      2 cups shredded cheese
Sour cream, salsa, avocados for serving
Preheat a griddle or skillet on the stovetop to medium heat. In a medium bowl, toss together the turkey, barbecue sauce and green chiles. Spread an equal amount of this mixture on four of the tortillas (or five if you are spreading it thinner and making more quesadillas). Sprinkle the green onions over the top of the mixture and then top with the shredded cheese. Top with a tortilla and place the quesadillas on the griddle or stovetop, cooking for about 2-3 minutes each side until the tortillas are golden brown and crisp and the filling is hot and cheese is melted.

      Turkey Meatloaf with Tomato Relish

      Ingredients
      • Tomato Relish Ingredients:
      • 1 onion, finely diced
      • 2 garlic cloves, minced
      • 2 bay leaves
      • 2 red bell peppers, cored, seeded, and finely diced
      • 2 tomatoes, halved, seeded, and finely diced
      • 1/4 cup chopped fresh flat-leaf parsley
      • 1 (12-ounce) bottle ketchup
      • Worcestershire sauce
      • 1 tablespoon Sea salt and freshly ground black pepper

      • Meatloaf Ingredients:
      • 3 slices slices white bread, crusts removed, torn into chunks by hand
      • 1/4 cup whole milk
      • 2 1/2 pounds ground turkey
      • 2 eggs
      • Leaves from 2 fresh thyme sprigs
      • Salt and freshly ground black pepper
      • 3-4 bacon slices
      Preparation
      • Relish Directions:Preheat the oven to 350 degrees F. Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
      • Meatloaf Directions:Place the torn white bread in a bowl and add the milk to just barely cover, swish t he bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
      • In a large mixing bowl, combine the ground turkey with 1-1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
      • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
      • Bake the meatloaf for 1 to 1-1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!
